Veggie Omelette

Makes one omelette 

Ingredients: 
1/2 Zucchini, chopped 
1/2 Summer Squash (yellow), chopped 
1/4 Purple Onion, chopped 
1/8 Red Bell Pepper, chopped 
1/8 Green Bell Pepper, chopped
2 Eggs, beaten
1/8 tsp Turmeric Powder (Indian spice) 
1/8 tsp Garam Masala (Indian spice) 
1/8 tsp Amchoor Powder (Indian spice) 
Salt & Pepper, to taste

Directions: 
Mix the veggies with the beaten eggs
Add the spices 
Mix well for 20-30 seconds
Spray a pan with some Cooking Spray
Pour the mixture and flip the Omelette in about 1.5 minutes
Serve plain but I highly recommend some Pineapple Salsa. 

PS: I can't flip an Omelette or pancake for the life in me so I just break it up and make it a scrabbled veggie egg breakfast.
